Job Summary

Thomson Safaris Ltd is seeking a skilled and creative Pastry Chef to prepare high-quality pastries, bread, and desserts for guests and staff in a safari camp setting.

The successful candidate will demonstrate creativity, adaptability, and strong organisational skills to work efficiently in remote locations with limited resources. The Pastry Chef will also assist with general kitchen duties and contribute to other camp activities when necessary.

Key Responsibilities

A. Pastry and Dessert Preparation

  • Prepare and bake bread, pastries, cakes, cookies, and other desserts for guests and staff.
  • Ensure consistency in the taste, texture, and presentation of all baked products.
  • Adapt recipes to available ingredients and the conditions of remote kitchens.
  • Create a variety of desserts that accommodate different dietary preferences and restrictions.

B. Guest Service and Menu Presentation

  • Present and explain dessert menu options to guests when required.
  • Interact with guests to receive feedback and improve menu offerings.
  • Collaborate with the Head Chef to develop special dessert menus for bush meals and themed dinners.

C. Kitchen Hygiene and Safety

  • Maintain cleanliness and organisation in the pastry section at all times.
  • Ensure pastry tools and equipment are properly cleaned and maintained.
  • Follow food safety and hygiene regulations, particularly in mobile camp environments.

D. Inventory and Stock Management

  • Monitor ingredient levels and report shortages to the Head Chef.
  • Ensure proper storage of perishable ingredients to minimise waste.
  • Assist in planning ingredient orders based on camp movements and guest numbers.

E. Staff Meals and Camp Operations

  • Prepare baked goods and desserts for both guest and staff meals.
  • Assist the kitchen team with general food preparation when necessary.
  • Support other camp activities, including setting up dining areas and assisting with food service.
  • Adapt to different camp locations and assist with moving kitchen equipment when required.

Qualifications, Skills, and Experience

Applicants should demonstrate the following:

  • Knowledge of baking techniques, pastry arts, and dessert preparation.
  • Experience in both pastry and hot-kitchen sections will be an added advantage.
  • Ability to work in remote environments with limited access to ingredients and supplies.
  • Strong creativity and problem-solving skills, particularly in adapting recipes to bush camp conditions.
  • Excellent teamwork, flexibility, and willingness to assist with other camp duties.
  • Basic knowledge of food safety and hygiene standards.
