Role Overview:

A specialist chef responsible for preparing authentic and high-quality Indian breads, kebabs, tandoori dishes, and curries, ensuring consistency and traditional flavor profiles.

Key Responsibilities:

• Prepare all Tandoor items (naans, rotis, kebabs, tikkas, etc.) to standard recipes.
• Manage the Tandoor station, including firing, temperature control, and maintenance.
• Marinate meats and vegetables as per established procedures.
• Ensure mise-en-place, portion control, and minimal waste.
• Maintain strict hygiene and safety standards at the station.
• Collaborate with other kitchen sections for banquet and a la carte orders.

Qualifications:

• Culinary training or significant apprenticeship under an experienced Tandoor chef.
• 3+ years of proven experience as a Tandoor Chef in a reputable restaurant/hotel.
• In-depth knowledge of Indian spices, marinades, and cooking techniques.
• Physical stamina to work in a high-temperature environment.
