Join us deep in the heart of the world’s most celebrated wildlife reserves, where the Big Five – the lion, the leopard, the buffalo, the elephant and the rhinoceros – run free on the endless, untamed landscape. Perched on a series of elevated platforms and walkways, our Lodge sits next to an animal watering hole, where you can watch a family of elephants stop for their morning drink. Nestled in the heart of Central Serengeti amid wide-open plains, our Lodge is just a 45-minute drive from the Seronera Airstrip, accessible by connecting flights from three main airports within Tanzania. This beautiful lodge opened under the Four Seasons Hotels and Resorts family in December 2012, and has 77 rooms including 12 suites and 5 villas, 3 stunning Food and Beverage venues, our unique Discovery Centre offering an interactive experience where you can learn about the wildlife, history and people of the Serengeti, Kijana Kids Club, a spa with 6 free-standing treatment pavilions offering bespoke rituals and treatments that celebrate Africa’s magic and mystique, fitness center and a dedicated team bringing your magical wildlife safaris experiences to life.

Key Responsibilities:

Guest Experience & Brand Standards

  • Ensure service delivery reflects Four Seasons philosophy: personalized, intuitive, and anticipatory.
  • Maintain visible floor presence during peak periods (game drive returns, bush dinners, high occupancy).
  • Engage with guests proactively and resolve concerns immediately.
  • Monitor and act on guest feedback (Qualtrics, LQA, direct feedback).
  • Ensure VIP, repeat guests, and special occasions are executed flawlessly.

Operational Leadership

  • Supervise daily restaurant operations during assigned shifts.
  • Conduct pre-service briefings and communicate daily highlights (VIPs, menu changes, occupancy).
  • Ensure correct sequence of service and timing standards.
  • Monitor section allocation and team productivity.
  • Ensure all opening and closing procedures are completed accurately.
  • Oversee bush experience setup and service execution when assigned.
  • Coordinate closely with Kitchen and Stewarding for smooth service flow.
  • Manage service flow by monitoring OpenTable.
  • Ensure accurate communication of Game Drive Lunch / Bush experiences.
  • Reduce order mistakes and service delays.
  • Strengthen beverage knowledge to improve upselling.
  • Maintain luxury standards even during low season occupancy.

Financial & Revenue Performance

  • Monitor daily revenue and void reports.
  • Ensure proper posting in Micros and Opera.
  • Support cost control initiatives (food cost, beverage cost).
  • Drive upselling culture (premium wines, cocktails, bush experiences).
  • Review beverage movement and prevent wastage.
  • Assist in monthly forecasting and budget alignment.

Team Leadership & Development

  • Coach Supervisors, Captains, and Servers on service standards.
  • Deliver structured on-the-job training (5-10-5 training plan).
  • Support performance evaluations and development plans.
  • Ensure grooming and uniform standards are maintained.
  • Encourage recognition culture (EOM nominations, daily praise).
  • Address disciplinary matters when required in coordination with P&C.

Quality & Compliance

  • Ensure HACCP and food safety compliance.
  • Maintain cleanliness and maintenance standards of the outlet.
  • Monitor equipment condition and report maintenance issues.
  • Ensure responsible alcohol service and licensing compliance.
  • Ensure health & safety procedures are followed.
