Head Cook
The Eastern and Southern African Management Institute (ESAMI) is an intergovernmental regional management development centre. The institute was established with the primary objective of providing the region with rained personnel in a number of critical areas including policy management, transportation management, financial management, information technology management, health management, human resources management, project management, energy and environment management and gender management among others. ESAMI seeks the services of a suitably qualified person to fill the post of Head Cook at its Headquarters, Arusha, Tanzania.

Duties and Responsibilities
Reporting the Manager Human Capital, the Head Cook is responsible for day today running, management and preparation of food ensuring the catering services are provided to the required standards including:
• Coordinating and monitoring food preparation and presentation for effective & efficient catering;
• Planning weekly menus and constantly updating them paying attention to seasonal availability;
• Preparation, seasoning and cooking various foods as per the planned menu;
• Prepare work schedules for the unit’s activities such as food production, cleaning, slock taking,
• Initiate food punhases and daily food requisition from store to kitchen;
• Monitoring stock levels for consistency and timely supply of materials;
• Daily consistent check of all supplies before usage to ensure freshness and flavor;
• Ensure that the Kitchen, storage facilities and all work areas are kept clean and tidy inconformity with health and safely regulations and promptly report any maintenance issues;
• Attend to customer complaints and offer practical solutions; and
• Ensure that all costs and expenditure are within Lhe budgeted levels agreed

Qualifications and Experience
Minimum Diploma holder in Food production or relevant qualification with three (3) years relevant experience in a busy hotel or Institution of higher learning.
Competence and Skills
• This position calls for strong organizational and communication skills among others;
• Demonstrated knowledge of food production, food portion control and c.ost optimization;
• Knowledge of food and health and safety standards;
• Strong organizational, team player, communication and interpersonal skills;
• Ability to work with minimum supervision and meeting tight deadlines
• Problem solving skills
• Computer literacy especially in MS-office, email and internet Mode of Application

As an Assistant Camp Manager your role is to assist the camp manager in ensuring that the camp systems, facilities, activities, and staff work together in a smooth, safe and harmonious manner so as to ensure that guests have a memorable stay.

Job Description (Duties and Responsibilities);
• Assist in answering any inquiries pertaining to camp policies and services and resolve guests, visitors, or client’s complaints.
• Lead, manage, teach, and coach camp teams, including support members, food services, housekeeping, laundry, maintenance, and other team members.
• Assist in performance management to ensure efficient operations and adherence to company standards, policies and procedures.
• Greet and briefing basic information to guests, visitors, or clients
• Assist in resolving customer complaints or problems.
• Assist in Managing guest services and activities
• Inspect guest rooms, public areas, and grounds for cleanliness and appearance.
• Assist in Coordinating front-office and Back of House activities of the camp with Central office
• Assist in monitoring petty cash activity of the camp
• Assisting in oversee assigned duties of staffs to ensure safety or compliance with rules.
• Document organizational or operational procedures.
• Assisting in managing movement of staffs according to company policy
• Other duties as assigned by the Camp Manager, Operation manager and Managing Director.

• Minimum 2 years’ experience as in hospitality industry
• Previous experience in bush camps will be highly valued
• Studies according to the position
• High level of English speaking
• Leadership skills, guest oriented, strong communication skills
• Team-orientation, loyalty and excellent leadership skills

• Good manners and a positive attitude
• A hospitable and service-oriented attitude
